We are proud to tell you that Laurie, our Assistant Bar Manager at The Weeping Willow won the West London heat stage for this years Chase Cup! Laurie wowed judges with enthusiasm, charisma and her attention to detail!
The team @rockthefarmfest and The Chase Cup asked competitors to showcase sustainability, champion home-grown produce and from scratch craft. The challenge was to think seasonal, local and timeless.
Laurie's Rhubarb Chase gin cocktail truly embodies this brief!
Rhubarb was the main flavour for Laurie's cocktail and is in season from April to June. She picked fresh tarragon from our herb garden at The Weeping Willow and sourced fresh flowers from Nurtured in Norfolk to garnish her creation.
In addition, Laurie created a selection of petite fours to compliment her cocktail including a dark chocolate ganache that was flavoured using the grated zest from the leftovers of the grapefruit used in the cocktail.
Laurie's love for mixology began while she was travelling and working in bars on the gold coast of Australia.
After learning the basics Laurie was back in the UK and joined us as a team member at The Northgate. It was here that Laurie learnt her craft under the tutelage of our Bar Manager, Lewis Dowling. Laurie concentrated on the art of mixing, balance and taste, refined her cocktail presentation and learnt that precision is key to creating a beautiful cocktail. Now, Laurie can be found mixing and creating for us at The Weeping Willow.
